The Isle of Raasay Distillery has unveiled the second edition of its highly anticipated Dùn Cana Sherry Quarter Cask expression. Bottled at a robust 52% ABV, this limited-release whisky is a tribute to the rugged beauty and rich geological history of the Isle of Raasay, a nod to the island’s highest peak, Dùn Cana.

This edition continues the legacy of the distillery’s signature lightly peated style, first introduced in 2021 with its inaugural Signature release. The Dùn Cana Sherry Quarter Cask Release explores the distinctive impact of sherry cask maturation, offering whisky enthusiasts a unique taste experience.

A Journey of Cask Maturation

The Dùn Cana Second Edition begins its life with a combination of Isle of Raasay’s peated and unpeated spirit. Initially, the whisky is matured separately in ex-American rye casks, before moving to a six-month secondary maturation in smaller, 125-litre Pedro Ximénez (PX) and oloroso Sherry quarter casks. This smaller cask size accelerates the maturation process, allowing the whisky to develop more intense flavors and aromas.

The resulting profile showcases a delicate balance of peppery spice, dried sultanas, and vanilla toffee. The finish lingers with salty chocolate notes and a light, aromatic wood smoke, offering whisky lovers a complex yet approachable dram.

Award-Winning Heritage

The first release of the Dùn Cana Sherry Quarter Cask series garnered significant attention, being named 2024’s best single malt Scotch whisky by Forbes. Master distiller Alasdair Day expressed excitement about this latest edition, calling it “a great addition to our core product offering.” He highlighted the positive response to the first edition, which sold out quickly, and noted that this release offers an exciting exploration of the distillery’s evolving style.

Availability and Pricing

Bottled in its natural color and non-chill filtered, the Dùn Cana Sherry Quarter Cask Second Edition is limited to 15,000 bottles worldwide. Priced at £85 (US$114), it is available now in select markets and online.
