The product in 2022 is not chilled and has no artificial colors or tastes. Natural flavor enhancement comes from using malts that have matured in both ex-bourbon and brandy/peated Oloroso barrels. Oloroso, a Spanish fortified wine, is often added to whiskies to darken their color and enhance the flavor by bringing out its dark fruit and nutty undertones.
There is a tendency for the whiskies that have been matured or finished in unusual barrels to oversell. Sometimes the extra complexity that distilleries claim to achieve via barrel choice falls short of my expectations. The unconventional cask selections worked here. One of my favorite things about a good whisky is how it evolves in my glass as time passes. The barrel effects added to the experience of the Paul John Christmas Edition 2022, which featured notes that were intricate, complimentary, and unfolded and altered the more I went back to them.
For those unaware, Paul John Whisky is produced in the western Indian state of Goa. Their 6-row barley comes up to the Himalayan foothills in the country’s far north.
John Distilleries produces the Paul John Whisky label. John Distilleries, established in 1996, is now a leading producer of spirits in India and across the world. The American alcoholic beverage producer Sazerac Company currently has a 51% stake in John Distilleries.
Paul John Holiday Edition 2022 Tasting Notes:
Details: Available in both 50-milliliter and 750-milliliter containers. 46% ABV. The price for a 750mL bottle is about $80.
Appearance: The liquid has a warm, chestnut color.
Nose: Aromas of vanilla and peppery solid spices hit first, followed by those of baked apples and brown sugar, and finally, a mild maltiness. Near the conclusion, a bittersweet undertone emerged. While some may detect chocolate, I tasted more of a date flavor (perhaps the Oloroso influence). Apple crisp and sticky toffee pudding with vanilla ice cream came to mind when I smelled this. True Christmas!
Palate: The vanilla and apple pie flavors linger on the mouth, but the dark fruit undertone is lost. In addition to the baking spice, there is a robust peppery heat. Notes of oak, apricot, malt, and a slight smokiness from the peat smoke make for a complex finish. Though sophisticated, the tastes are comforting. Whisky has a smooth, creamy texture and a deliciously long, peppery aftertaste.
